First Raw Wednesday Giveaway!

Hello, friends!

I hope that raw Wednesday was great! And I’m so glad that the young coconut tutorial was helpful. I encourage you all to pick up your cleavers and try these out at home!

To end the second raw Wednesday in our series, Jenna and I would like to announce our first giveaway! The prize is one copy of Ani Phyo’s wonderful new dessert book, Ani’s Raw Food Desserts.

For those of you who don’t know Ani’s work, you can find a link to her first book in my Raw Foods 101 tab. Her first book, Ani’s Raw Food Kitchen, belongs in every aspiring raw chef’s library. It’s beautiful, informative, and stocked with absolutely delicious raw recipes. Best of all, it’s simple: what makes Ani so special is her easy approach to raw foods: all of her recipes demand minimal prep time, minimal kitchen appliances, and minimal stress.

Ani’s new book is a trim, adorable collection of her favorite desserts. Those of you who have experimented with raw desserts have probably noticed that most are fairly labor-intensive and extremely high fat. Ani’s are healthy, quick, and nourishing. I plan on doing a review of the cookbook soon, at which point I’ll have a chance to show you some of her recipes up close and personal, but in the meantime, it’s my and Jenna’s pleasure to offer one of you a copy! All you have to do is respond to this post with a comment telling us your favorite raw recipe thus far in the challenge. It can be a simple salad or one of your raw snacks: anything that has captured your imagination in these two weeks. Good luck!

So you’ll notice that I’m not at the Animal Collective show. Unfortunately, I’m just not feeling up to it tonight. This breaks my heart, since Animal Collective is by far one of my top bands, but sometimes you need to listen to your body: I’m still tired and very queasy, and I’m flying out at the crack on dawn on Friday. Sigh. I’m sure it’ll be a night to remember.

my most dependable raw dish is a salad topped with raw sprouts and sprouted chickpeas.

Just kidding.

I know it might sound a bit weird, but my fave raw dish is a simple celery “coleslaw”. I take three or four stalks of celery, cut them thinly and on the bias (aka at an angle), and then toss them with a really vinegar-y vinaigrette (sometimes just apple cider vinegar and 1/4 smashed avocado + S/P). Toss and serve. It’s simple but delish!

I love, love, LOVE stuffing romaine lettuce leaves with chopped veggies and peach and mango salsa. So simple, yet SOOOO YUMMY!!!! I really hope I win this one. I will keep entering until I win something! I’m scrappy that way.
Oh… quick raw “cheese” question. Is there any nut besides cashews that can be used? I’m allergic… BOO! :-)

My favorite raw recipe is olive oil butter. It’s so simple, yet so versatile and delicious. Just extra-virgin olive oil and butter with sea salt, frozen and then stored in the fridge!

Mmm, this raw food challenge has been a delish challenge! One of my fave recipes is for pasta sauce – i add a tbsp of peanut butter to fresh crushed tomatoes and spices!

I haven’t had that much luck with a lot of my raw recipes yet, thats why I need a raw cookbook!! So far, my favorite has to be overnight oats, because really, who doesn’t love oatmeal?! I love it toped with raw almond butter and dried fruit!

I’m not sure it’s my fave but it’s up there… I made tabouleh for my raw lunch today: parsley, tomato, scallions, mint, lemon. I think it would be good with pine nuts in it but I was out. It’s also excellent if you use romaine leaves as scoops. Sooo good!

take a avacado, cut it in half and spoon it out, place a dollop of raw hummus on each half, with sprouted quinoa and shredded beets to top it off.

Ooooo my favourite raw recipe thus far is Ani’s marinara! I love it and in fact I think if you were to food process it (instead of blend it) any non rawie would love it in the dead of summer! :)

Oh and I tried it before Raw Wednesdays so it doesn’t count but Ani’s Raw Doghnut Holes are awesome! The best running fuel ever!!!!

PS: Today I have Ani’s Raw pancakes and for dinner I made the rawsagna! I just about died when the sunflower seeds actually turned cheese-like! ;)

Count me in on the giveaway, how exciting! I wish I had a real recipe to share, but I don’t. :P I blended up a thick fruit soup today using plenty of fruit and some water and it kept me full for a surprisingly long time!

It sounds simple, but I had a salad last Raw Wednesday that really knocked my socks off: spinach base with chopped carrots, celery, fresh cilantro, avocado, cucumber, and dried cranberries, all drizzled with a dressing of combined olive oil and lemon juice. So delicious, and it left me way more satisfied than I had thought it would! Thanks for the giveaway!

it might not be fancy or require much expertise, but I just bought and cut up a fresh pineapple, and I have to say that has to be my favorite raw snack. Dates with raw almond butter aren’t too shabby either :)

As a semi-vegetarian I decided to do some research and found a tasty, easy, and satisfying raw recipe to try. I found the below website and really LOVED the “Traditional Raw Carrot Soup”. It sounds somewhat simple (it was vverrryy easy to make), but it really made me appreciate the simpleness and deliciousness of carrots with avocados! I also added shallots, sprouts, and both cumin and ginger. Thanks for the challenge, my eyes are definitely more open to the raw lifestyle.

I have to say although not very creative, I’ve found some excellent raw cookies and raw bars on the shelves of local healthfood store/Whole Foods. I also love making raw lettuce wraps. I want to get Amy’s book so I can try out some of those great recipes I keep seeing around! :D

I’m just starting to venture into the raw world so my favorite dish so far is a very simple pasta I’ve been making with zucchini, throwing in some pieces of kale, halved grape tomatoes, olive oil with smashed garlic, cayenne pepper, red pepper flakes. Delicious!

I like Ani’s baja tacos in her first book. My friend and I try to cook a new raw recipe every Sunday night…she suggested this one (which I never would have picked) and it was amazing!

I have oodles to learn yet about raw recipes, but one simple prep for raw cucumbers or celery that has amazed me is a dressing of apple cider vinegar and a sprinkle of salt and italian spices. This tenderizes the veggies a bit after a couple hours and makes them oh so tasty!

My absolute favorite raw snack has become dried raw dates sprinkled with raw coconut shavings. After letting them sit in the fridge for an hour to cool, they have the most decadent and delicious taste! [:

My fave is a lunch I made today – SQUASH “PASTA”…I sliced 1/2 a yellow squash into strings and added that to a mixture of cherry tomatoes and black olives. All topped with olive oil – simple but delish!

My favorite new raw recipe is raw kale salad. I have been making mine with shredded daikon & carrot and pumpkin oil.

Even though I love kale in any capacity, in all honesty you could put pumpkin oil on anything and I would eat it.

True confession: I licked my hand clean after massaging my salad the other day. No shame AT ALL.

I’m lucky enough to be spending a week, including one of my raw Wednesdays, in Spain, so I have some new and interesting (and amazing-tasting) raw foods right at my fingertips! Yesterday I had a raw coconut and banana juice from a street market, and I think that had to be my favorite — it was delicious!

My favorite raw recipie so far has been just a simple salad with chopped avacado, I ‘ve had it everyday for lunch this week and I never realized how much I love avacado! That one simple addition has been amazing!

My favourite raw recipe is something I stole off of Gone Raw – a cauliflower curry with sweet sauce (it’s adapted from the fabulous raw food real world)

I hope I win the book, because if I don’t, I’ll have to rush out and order it! My favorite raw dish has to be the pizza that I just made. After that, I’ve been loving the different raw hummus’s that I’ve tried. I never thought to do that before, thinking that the beans HAD to be cooked. You can really use any bean, so it’s great. My next hummus venture is to try zucchini hummus. Hey, how bad can it be? Tasty ingredients makes for tasty food!

Aw, I hope you start feeling 100% soon. The great thing about living in NYC is that amazing bands come through all the time, so there are other opportunities, for sure.

I’ve been drooling over this book ever since I heard about it, and now that it’s out I am so interested – but sadly, my bank account is not. So let’s just hope that luck is on my side, huh? The best thing I’ve made is actually what I had for lunch yesterday but haven’t blogged about: zucchini pasta with spinach pesto. It was creamy, light and refreshing and probably one of the best raw meals I’ve made myself. Your massaged kale salad comes in second!

I recently got a juicer (thank you Mommy) and I’m loving raw, fresh, living food juices! I like ginger, granny smith apple, celery, & cucumber quite a bit–but there’s so many good living juices out there to try.

My copy of Ani’s Raw Food Kitchen came in the mail yesterday. I tried the breakfast cakes this morning. I’d never had flax before but it was great. I found lots of recipes I want to try starting with the Donut Holes which Jenna said were fabulous. I would love to have a copy of Ani’s desserts book.

OH!! My favorite raw recipe thus far has been the raw chocolate pudding!!!!

1 avocado (just the flesh- discard pit and skin of course!)
7 dates, pitted
2 T carob powder (or 4 T cocoa)
Squeeze of Agave

Blend all together in a blender, and you have some YUMMY pudding!!

I just found out about the challenge but I eat a lot of raw foods anyway. My current favorite is making Ani’s buckwheat crispies in the dehydrator and eating with chopped up fresh fruit!
