  3. Great interview! Since I’ve only recently started reading food blogs, I hadn’t heard of Lindsay’s blog, but I can’t wait to check it out! The potato salad (both versions) looks delcious and I’m so tempted by her sweet potato muffins – looks like I have some baking to do this week :)

      Yay!!! I hope you try the raw mayo! I love it, and it’s so versatile: you can turn it into lots of dips and dressings by added different herbs and spices.

    This interview was great and I actually had never heard of Lindsay’s blog before (looks like I was one of the only ones out of the loop). I checked it out, loved it, and ordered two of her e-cookbooks. I just couldn’t resist. Lately I have been consciously cutting down on dairy (and meat, but I have been doing that for much longer) and am really interested in going vegan. I just need to remember not to try to do it all at once because that will never work for me. Little by little, just like you recommend! Thanks Gena!

    Dear Gena,

    I really appreciate your approach to this blog. Incorporating other diets/lifestyles is a great way to help your readers figure out what is best for them. With that said, I am a little concerned that Happy Herbivore said that “The fat you eat is the fat you wear. It’s that simple.” This is obviously not true for everyone, as you demonstrate every day with your consumption of avocadoes, oils, etc. I wish she had at least noted that her diet is the best one for HER, rather than make it seem like it would be the best for everyone. Does that make sense?

      Amy,

      Fair point. Clearly, I eat a diet that’s higher fat than Lindsay, and I definitely eat more oil than she favors.

      But I believe what she meant with that comment wasn’t fat in general, but rather unnecessary fats and/or animal fats. And I do agree with her that it’s wise to avoid the use of excess fat in recipes where it’s not needed — NOT, of course, at the expense of taste or health. In any case, I respect her views on a low-fat diet, but it goes without saying on this blog that the general emphasis is on “do what works for you.”

    Summertime recipe… we recently made fresh pina colada, and it was amazing! Juice one pineapple. Then blend water and meat of one or more coconuts. Blend together with ice and rum (optional). Tastes like summer!

    Fav summertime food = lettuce, tomato, and avocado sandwich with mustard and Italian salad dressing :-)

  35. Great interview!!! “The fat you eat is the fat you wear” makes perfect sense. Her book references are many of my favorites too, especially Thrive and E2L.

    My favorite summertime recipes isn’t raw but it is vegan: farmers market zucc’s and sqashed, sliced thin and layered over a nice slice of fresh market foccacia – drizzled with salt, pepper and olive oil. YUM.

  36. OMIGOSH, both of your ‘tato salads look s’gooooooood! I do love making creamy salads during summer… chickpea salad is always a favorite. It’s a good replacement for tuna salad & is so much better for my health, and the health of the tuna fish.

  39. Thanks for the interview Gena, I hadn’t visited her site until now :) I love hearing from different sides of the “healthy” spectrum… It’s so interesting to me how everyone has their way of eating and being healthy!

    But that is what works, right? Finding what works best for us! Thanks for the perspective ladies, from someone who isnt vegan or raw, I truly appreciate learning more about our bodies and our health.

On a completely unrelated note…I wanted to thank you for the advice on the juicer….my breville juice fountain plus showed up on my doorstep today…its fresh veggie juice for me in the AM…I’ve got my carrots, beets, spinach and ginger all ready to go. I’m so excited! Thanks again for the inspiration!

    what a great interview! it was so inspirational. my fav summer time recipe has to be salsa! avocado, tomato, mango, cilantro, onion, garlic with a drizzle of olive oil and lemon. yum!

  49. I love interviews! I just did one with Molly Wizenberg of Orangette fame and it was really fun. Now if only someone would interview me… ;-)

    As for that potato salad, did you save any for me? You didn’t? Well, now I’m not sure we can be friends any more, Gena.

    On a more serious note, while I’m not interested in a vegan diet for myself, it’s good to read other people’s thoughts on cooking and eating. It pushes me out of my comfort zone, which I think can be a good thing. As a vegetarian, I agree with Lindsay: I’m not really into all the fake meats, so I keep them to a minimum.

    My favorite summertime recipe is lettuce wraps. I take lettuce fresh from the garden and fill it with brown rice, and seasoned veggies (garlic, vinegar, salt, sesame seeds) and maybe tofu. Wrap and eat!

    I’m an avid reader of HH’s blog, and it was through her most recent post that I stumbled across this interview. After reading through a bit of your archived posts, I’m glad I did. :) I’m not raw myself, but my diet tends to lean that direction just based on my own preference for whole and fresh foods. Thank you for the wonderful interview.

    I have purchased all of HH’s ebooks except this one, and I was planning to later next week. I figured I might as well give this a go to see if I might save myself five bucks! Ya never know..

    My favorite summertime recipe is very simple:
    1 frozen banana
    1 cup of chocolate non-dairy milk (I prefer almond milk myself)
    1 tsp coconut extract
    2 tablespoons cocoa powder
    A bit of stevia (or your preferred sweetener), to taste

    Blend it up and it makes a DELICIOUS smoothie. Mmmm… I know what’s for breakfast tomorrow.

  61. My favorite summer recipe is simply fresh summer fruits – berries, peaches, mangos, watermelon, canteloupe, etc…so refreshing!

    For a REAL summer recipe though, my favorites would be homemade fresh tomato soup and also fresh raw corn soup, all with local fresh produce.

  63. wow, this is such a great post, i loved it! i may not share all the same beliefs or eat the same way, but i’m still learning right now and soaking up all the knowledge I can as I try to find my groove.

    Summer screams berries, melons, and corn on the cob! i know, not a recipe, but these things never make it into recipes as i eat them before I get the chance :)
