Greetings, everyone!
Hope you’re enjoying the holiday weekend. I’m catching up on some work, some housekeeping, and some time with friends, but to kick off the first official weekend of the summer, I wanted to share what is undoubtedly my favorite summertime lunch!
The recipe could not be more simple: whip up a batch of guacamole, and serve it however you want. You can eat it with crudites, in lettuce wraps (butter lettuce and romaine leaves are great for this), or scooped atop a giant salad. This meal is quick exit and perfectly combined, so it’s ideal for lunch, yet filling enough for a light dinner.
Best of all, if you double or triple the guacamole, this is a wonderful recipe to entertain with. I love having friends over, putting out a huge platter of butter and romaine leaves, crudites, and guacamole, and letting my guests assemble wraps.
I like my guacamole tart and sweet, and without red onion, natch. But I suppose the onion could be added if you like a more traditional flavor
Here’s my version:
Guacamole (serves 1 or 2 — I usually devour the whole recipe!)
1 avocado, pitted and chopped
1/4 red pepper, finely diced
Handful cherry tomatoes, chopped into small pieces
Juice of 1 lemon or lime
1/2 cup cilantro, packed and chopped
1/2 packet stevia, or a few drops (you could also use agave or honey)
Sea salt and pepper to taste
Begin my mashing the avocado and lemon or lime juice with a fork, till it’s mushy but not entirely without texture. Add the rest of your ingredients and mix again. Voila!
Stuff this into butter leaves for wraps:
Or simply serve it alongside your salad or veggies.
I sometimes add a batch of this recipe to a big bowl of greens and mix it all up as a salad.
I hope you’ll all try this light, quick, and delicious–not to mention colorful–recipe as the weather gets warmer! If you do, let me know how you like it.
Enjoy your Sundays, friends.

Goodness Gena! EVERY single recipe you post, I end up printing out. When are you going to write your own “uncook”book? I am going to try this recipe for sure!
Aw, thanks, Abbie!
If I were to publish a book, this would be one of the star recipes. I love it so much.
Hope you’re having a great weekend!!
yum love all the recipes!
Every single recipe you make looks phenomenal! I’m totally using this idea for the next raw wednesday =)
Yay! Hope you love it, Shelby
Lovely guacamole. I have never heard of adding any kind of sugar to guacamole before.
whoops! I am the anonymous commenter previously. Carelessly clicked submit before finishing.
Thanks so much! I love this recipe.
looks divine! it is similiar to the great dish I have at Caravan, the equador
Gotta try that at Caravan soon…
Guacamole in a lettuce wrap sounds so refreshing! I’m going to have to try that one of these days.
The sounds like the perfect meal for a warm day - do you find the avocado starts to brown very quickly? Or do you think this is something I could make in the morning and take to work for a nice lunch in Central Park?
Hope you’re enjoying your long weekend!
I think it would be fine, Katherine! There’s plenty of citrus in it, and the acid will keep it fresh for at least a while. Let me know if you try it
yum that looks so good
you really should make an “un-cookbook”
also, I was wondering what you think about products like this:
http://www.turtlemountain.com/products/coconut_yogurt.html
Do you think this is healthy or is it too processed? I’m guessing it’s better to just eat whole foods as they are, plus it has a lot of added sugar
oooh, I love guacamole like this! I make mine with extra lime and no sweetener.
deeeeeeeeeelish avocado action!
its amazing that your recipes still continue to tempt me … even in winter months. I agree that you should publish a uncookbook of your own - what i love about your recipe is that it is for everyday use - ie not all nut/dried fruit/seed based.
Thank you so much, Cecilia!
Thanks for this! We love avocado and this is a must try recipe!
It’s REALLY tasty, Suzanne! Enjoy it.
oh my that looks amazing!
Thanks Amber!
Hi, nice posts there
thank’s exchange for the intriguing advice
I heart guac so much - it is always nice to have a new recipe to try. A little twist can make such a difference!
It’s true! I love the slightly sweet twist. Enjoy!
I love guacamole! Thanks for the recipe!
Mmmm can’t beat guac! I always forget to make this. So yummy!
Your guac looks lovely - I would omit red onion too! I can’t stand onion/garlic flavor when it lingers, which is unfortunately usually when consumed raw. I actually had my first raw entree today so of course I thought of you. There’s a new-ish spot called Adelina on 17th between Park Ave South and Irving, and they have both raw and vegetarian menus. I had spiralized zucchini spaghetti primavera with a cashew cream sauce, something I’m sure you’ve had many versions of. It was really bland, so as someone who’s new to the raw way of eating but “rawcurious”, I’m wondering if that tends to always be how this dish tastes or if it just wasn’t prepared in an exciting way. Have you been to Adelina yet? I’m jealous of your blogger lunch at Caravan of Dreams - I’m so bummed I couldn’t make it, but that restaurant is on my list of “to-try” restaurants now for sure!
Hey D!
I have a recipe for this in my recipe tab (which is under construction). It *should* be unbelievably tasty! So don’t be fooled. I’ve been to Adelina and think it’s cute, but definitely sounds as though they didn’t hit a home run with that dish.

Gena,
So excited you got to meet Gina. I just love her, and I can’t wait for her friend Megan to start her own raw food blog!
Your guac plate looks amazing. I love my guac and bit chunky, but I’ve never sweetened it. I’ll have to try that…perhaps this Wednesday?
Yay! I hope you try it, Heather!! And that you had a great weekend.
yummmmmm i LOVE avocado! what a simple and tasty meal!
Thanks, Chica!
Refreshing, nourishing, and delectable. Perfection.
I appreciate so much that you don’t apologize for not serving meat or animal products. Your confidence in your decisions is so refreshing!
Thanks so much, Brooke! I hope it’s inspiring
Nothing beats homemade guac. Can’t wait to try it out!
Guac is my absolute favorite thing to eat!! Its so simple to make and the flavors are nothing short of amazing! Thanks for another recipe to add to my collection. I think your idea of adding a bit of sweetness is great! I’ll have to try it!
