Quick and Easy Banana & Granola Wraps

I often treat long weekends as an opportunity to spend some leisurely time in the kitchen, but this past weekend, I was more interested in working hard and playing hard; cooking was the last thing on my mind. So it was with great delight that I prepared and enjoyed these raw banana and granola wraps yesterday morning. Though hardly a real “recipe,” they were so quick, easy, and tasty that I couldn’t help sharing them with you all.

This isn’t my first experiment with banana wraps. The last time I made them, I wrapped them in collards and spread them with almond butter and agave (yum!). This time, I wanted some texture contrast and crunch, so I used crispy romaine and crunchy granola instead. You could use any granola in this recipe, of course. I used the Living Intentions Superfood Cereal in Cacao Crunch. I love this granola (or raw-nola), which is carried at a health food store near my mom’s. (A few of my DC readers have mentioned that it’s now in the bulk section of some Whole Foods locations, too.) It’s super crunchy, sweet but not too sweet, and full of groovy stuff, including buckwheat sprouts, flax, and cacao butter.

In place of granola, you could use cacao nibs, trail mix, simple rolled oats, or even cooked quinoa. The idea is simply to use the romaine leaves as a handy little vehicle for the banana and grain/granola of your choice. A drizzle of maple syrup, agave, or nut butter would of course top things off nicely, too. You can enjoy the wraps as a light breakfast or any anytime snack.

Easy and delicious! I eat ‘banana sushi’ all the time; this will be a nice change :)

Bananas filled with sunflower seed butter are usually my go-to snacks when I wake up in the middle of the night to pee (TMI? Sorry, but it happens every night.) I’ve never wrapped them in lettuce, but I can see how the crunch factor would be a nice addition (and easier to handle than a paper towel, I might add.)

Hope you had a nice weekend! Mine was filled with baseball, books and my normal easy eats. Nothing fancy, but pretty much a relaxing weekend–although as usual, entirely too short.

I have never made a hard effort to go vegan, but I do enjoy many of the foods available to a vegan diet! These sound quite scrumptious!! :)

Wow! So interesting. I must admit I am wary of trying bananas wrapped in lettuce (or collards)…but I think I might have to. It does look good!

This looks divine!! and i love that it can be great breakfast options for 8am classes xD
My go-to option for a weekend meal is a smoothie with everything in it, a banana with almond butter, or any pieces of fruit!

I love this idea! I, too am such a fan of the cacao crunch granola. It’s hard to keep enough on hand! The chia ginger flavor is also a favorite of mine, tastes quite like gingersnaps in granola form. Yesterday for breakfast I made a quick meal of buckwheat crispies, grated pears, berries, and coconut butter. Yum!

I like the idea of the banana in romaine rather than collards. These would be a welcome change of pace from my normal oatmeal breakfasts.

This doesn’t at all seem like a substantial breakfast, where’s the protein and complex carbs? The fat content is also slightly low. Super light and wouldn’t even fill me up for a snack…
