Thinking Outside the Wrap: A Green Wrap Tutorial at Food 52

One of my first CR recipes was for collard leaves stuffed with cashew “pizza cheese”—cashews blended with lemon, sun dried tomatoes, and basil. It has remained a reader favorite ever since, and it’s also one of my personal favorites.

Since then, I’ve posted a lot of recipes for wraps made with green leafies, be they collards, kale, or romaine. Today, over at Food 52, I’m sharing a special “how-to” on prepping, folding, and enjoying collard leaf wraps.

Included in this post will be not only instructions for making the wraps, but also a run through of my favorite raw wrap recipes, and a primer on which kinds of greens to use with which kinds of dishes/cravings.

And finally, I’ll include a new and improved version of my famous collard wraps and pizza cheese, this time spruced up with some sweet, tender roasted peppers.

Gena you always make the most perfect wraps! They are so tightly wrapped, without tearing the leaves..I clearly need your tutorial on it!

I love this, Gena! I always end up getting too intimidated by wraps, so I make the inside part of recipes, and just use the collards as a sort of “dipper.” But thanks to this tutorial, hopefully I’ll work up the courage. : )

Hahahahaha! I’ve attempted to do this before and they worked relatively well, but I think I just did it too loose. It was an amusing eating experience.

I cannot thank you enough for this post! I really love collard green wraps, but I couldn’t keep it from falling apart and tasting bitter. I always put the filling horizontally rather than vertically… I’ll definitely try your method!

Gena – I love your blog, and I take inspiration from it almost daily. But the one recipe i can whole-heartedly attribute to you and solely you – is the collard wrap. I tried it once, and have recreated it numerous times since then. It is a staple in my kitchen and I cannot imagine life without it. I’m so glad you are sharing it with more people!

THIS IS AWESOME REMINDER THAT I CAN MAKE COLLARD WRAPS FOR LUNCH. I recently discovered I have a histamine allergy so i’m allergic to a lot of foods that come with that list. Anyone else on here relate and can send a girl some advice?

I made these yest. I was kind of skeptical (cheese from cashews…really?) but it was delicious! Even my husband loved it & requested that I make it again. Thanks for the awesome recipe :-)
